Baltimore learned to cook from the water. Maryland blue crabs come out of the Chesapeake Bay, get picked by hand, and go into crab cakes held together with barely enough filler to keep them from falling apart. Old Bay turns up on everything from chips to sweetcorn to the rim of a glass. This is a working harbour city, and its food has the same honest, generous quality as the people who built it.&nbsp;The flavours arrived by ship and by rail. Polish and German families settled around the markets of Fells Point. Italian families came up from the docks in the late 1800s and built Little Italy street by street. Jewish delis lined Lombard Street so thickly that locals named it Corned Beef Row. Most of those kitchens are still family-run, still serving the recipes that came over with the first generation.&nbsp;Old Bay itself is a Baltimore story. A German immigrant named Gustav Brunn blended it here in 1939 from celery salt, paprika, mustard, and more than a dozen other spices, then named it after the steamship line that ran up the coast. Nearly a century later, it is still made in the city and still the first thing a Baltimorean reaches for. Eat your way through Baltimore and you taste the whole history of who came here.

The streets are still paved with the original Belgian block, the row houses still lean toward the water, and the food still comes from the families who have run these counters for decades. It is a neighbourhood best seen slowly, on foot, with someone who knows which doors to walk through.&nbsp;Over a few hours, you'll eat your way from the harbour to Little Italy. What You’ll Taste

Fells Point and Little Italy sit side by side on Baltimore's harbour, and together they hold the city's whole immigrant table in walking distance. Fells Point came up around the shipyards, which means its food was built to feed working people: pierogies, seafood off the boats, and the markets that have fed the neighbourhood since the 1700s. Little Italy is quieter and tighter, a handful of narrow streets where Italian families settled after arriving at President Street Station and never left.&nbsp;&nbsp;We chose this route because you can taste the layers without ever getting in a car. Polish, Jewish, and Italian kitchens within a few blocks of each other, most of them family-owned, most of them serving the same recipes they always have. It is the real working history of how Baltimore eats, not the version printed on a postcard.
